Wild
Mushroom Ragout
Serves 4-6
2 tablespoons butter
1 tablespoon olive
oil
2 cloves garlic, crushed
1 large shallot, finely diced
1 pound
mushrooms—porcini, oyster, chanterelles, or
borel, roughly chopped
1
tablespoon chopped fresh thyme
2 tablespoons lemon juice
Melt butter in a
medium sauté pan on medium heat;
add olive oil and mix well. Add garlic and
shallot to
pan; cook for 1 to 2 minutes. Add mushrooms; turn
heat to
medium high and cook for 3 minutes. Add
fresh thyme and lemon juice; stir.
Remove from heat
and serve over whole wheat crostinis or wild rice.
